Carla's Yummy Recipes

A collection of recipes, some selected for being healthy, some for their simplicity, and others are just meant to be eaten!

Creamy Cilantro Dip

Prepare this dip up to 12 hours ahead of time.  Prepare the vegetables in advance, too, and store them in a plastic bag to which a moist paper towel has been added.

Prep Time: 15 minutes (Ready in 1 hour and 15 minutes- I recommend making it 12 hours ahead for a richer flavor.)  Makes 1 ½ cups

1 (8 oz.) container of sour cream
1/3 cup of mayonnaise
1/2 cup chopped fresh cilantro
1 tablespoon of sugar  (optional- I felt it was a bit sweet with the sugar, I would omit.)
1 teaspoon grated lime peel
1/4 teaspoon cumin
1/8 teaspoon salt
2 tablespoons fresh lime juice  (optional- I added an extra 2 tablespoons for extra tangy taste)

In a medium bowl, combine all ingredients and mix well.  Cover, and then refrigerate 1 hour to blend flavors.  I make it 12 hours ahead for the richer blended flavor.  Serve with your favorite fresh cut up vegies!  Pictured with carrots, celery, sweet bell peppers, cherry tomatoes, broccoli and zucchini.

Healthy Hint
To reduce the fat in each tablespoon of this dip  by about 1 gram and to cut the calories in half, use light sour cream and light mayonnaise.  This substitution also makes one serving of dip a free dietary exchange.

1/2 cup   low-fat vanilla (or plain) yogurt
1/4 cup   orange juice

Combine all ingredients together in a blender and puree until smooth.  You may need to add more orange juice if it's too thick.  Add 1/4 cup at a time.  VIOLA!!!

Pour your delicious TB&B Smoothie into a beautiful wine glass or water goblet, sit back and enjoy!!

Healthy Hint
To get the added fiber in my diet... I add my fiber powder to my smoothie.  Great way to sneak it in!
